Healthy Curry Kale Side Salad

This DELICIOUS side salad is inspired by the Deep Green salad from Portia's Cafe in Columbus, Ohio. Enjoy the healthful benefits of raw kale and onion in the most delightful way!

Ingredients:

1 Bunch of kale (I used purple Russian kale but any you like or have access to is good)

3/4 Cup slices of yellow onion

2 Tbsp coconut sap vinegar (or another warm and sweet flavored vinegar like champagne or cane)

2 Tbsp reduced sodium tamari (or 1 tbsp regular tamari + 1 tbsp water)

2 Tbsp avocado oil

1 1/2 Tsp curry power

1 Tsp coconut sugar

Key: Tsp = Teaspoon / Tbsp = Tablespoon

Steps:

1 - Prepare your onion slices and place in a mixing bowl

2 - Wash, pat dry, and de-stem your kale (de-stem by running a loose fist up the kale, separating any stubborn stalks at the top manually).

3 - Chop kale leaves into 1-2 inch pieces and mix with the onion slices. Discard stalks.

4 - In a small mixing bowl combine vinegar, tamari, avocado oil, curry powder and coconut sugar. Whisk until well combined (45 seconds-1 min).

5 - Pour liquid on top of the kale and onion and mix until very well combined.

6 - Serve a small amount on the side of any meal, or as a snack. Store in the fridge. Note: Kale and onion will soften as time goes on but will still taste great! For an alternate version serve a small amount atop lettuce or spring greens and drizzle with ranch dressing.
