Healthy Breakfast Egg Sandwich
This egg sandwich features sprouted pumpkin seeds which are super high in magnesium! A great way to start your day + the protein of the egg. Suggested below are the ones I use, however you can substitute or sprout your own!
Ingredients:
1 English muffin
1 Farm fresh or pasture raised egg
1/4 Avocado
1-2 Tbsp Fresh sauerkraut
2 Tsp Sesame oil or butter
1 Tsp Your choice of frying oil or butter
Key: Tsp = Teaspoon / Tbsp = Tablespoon
Steps:
1 - Carefully cut the english muffin in half using a serated knife or separate pieces if pre-cut
2 - Toast so that the edges are golden brown
3 - While toasting pan fry your egg in 1 Tsp of your choice of frying oil or butter
To pan fry egg, heat small non coated pan on medium high heat for a few minutes (if coated cook as you normally would - although coated pans can scratch and/or leach into food so not recommended)
Carefully add 1 Tsp of your choice of frying oil or butter
Heat for an additional minute
Carefully move the pan around so the oil/butter coats the entire pan
Add egg and cook till your desired level of doneness flipping once (Tip: While flipping move the pan around once again so that the oil/butter coats the entire pan)
4 - Add 1 Tsp of sesame oil or butter to each inside half of the english muffin
5 - Smash avocado with a fork so it's evenly distributed on both sides
6 - Add egg on the bottom side
7 - Add sauerkraut
8 - Add pumpkin seeds (At this point you can add any sprouts or fresh crunchy greens on top if desired)
9 - Put sides together and enjoy!
